Running "rpm -e" will generally remove everything the RPM installed except
configuration files that have changed (which it will rename to *.rpmsave).
Occasionally, an RPM will create files or links in the post-install script and
not remove them in the post-uninstall.  This is unlikely to happen in most of
the standard distribution RPMs.

You could use the "locate" command to make sure there are no stray copies of
apache hiding anywhere else on your system.
