FWIW, For me Anaconda is overkill for the KVM guest images too. I am used to do that with small xquery script (easy for the libvirt domain definition) containing:

yum (conf, root) install setup kernel acpid chrony acl attr audit rsyslog dhclient openssh-server openssh-clients rootfiles yum

(yum dep-solves the above to 152 packages for F17, x86_64)
