Hard to say, it works here. I'd guess something is failing during the 
build process. You might try capturing the build output to a file and see 
if you can find what's failing. Something like:
$ rpmbuild -bb freetype.spec 2> build.out

Here is the result of my build:

$ cat /etc/redhat-release
Red Hat Linux release 9 (Shrike)

$ rpm -ivh /mnt/cdrom/SRPMS/freetype-2.1.3-6.src.rpm
$ cd rpmbuild/SOURCES/freetype-2.1.3/
(Edit .spec file and enable bytecode interpreter.)
$ rpmbuild -bb freetype.spec
[snip build output]
Checking for unpackaged file(s): /usr/lib/rpm/check-files \  
      /home/mfratoni/rpmbuild/tmp/freetype-2.1.3-root
Wrote: /home/mfratoni/rpmbuild/RPMS/freetype-2.1.3-6.i386.rpm
Wrote: /home/mfratoni/rpmbuild/RPMS/freetype-utils-2.1.3-6.i386.rpm
Wrote: /home/mfratoni/rpmbuild/RPMS/freetype-demos-2.1.3-6.i386.rpm

And the files you were showing as missing:
$ rpm -qlp /home/mfratoni/rpmbuild/RPMS/freetype-demos-2.1.3-6.i386.rpm
