It may be because Catalina has given up on pretending the built in Messages app does jabber. Or it may be that when I got my current Macbook, I set things up from scratch instead of pulling the extremely crufty configuration foward from my previous computer.

It’s because you don’t have some other application on your Mac that’s claiming that protocol.  I do, and it’s one that I can’t uninstall.  Even if you have this, note that it’s still not point and click, because you have to have successfully set up a jabber account.  For it to be point and click, ideally either you wouldn’t have to have set up a jabber account, or else you would be prompted to set one up, and this would be dependable and easy, and once you’d done it it would work after that.

What you’re describing is a rigged demo, not production code. :)
