My grandfather worked rotating shifts in a factory for most of his working life. This must have been very difficult, but the job supported his family and he and his family accepted that burden.
Maybe if we needed to work that way all the time to participate in IETF, we'd all be accustomed to it too. But only doing so twice per year (because one out of three meetings is probably close enough to your local time zone) isn't enough to develop strategies of dealing with it.
