Proprietary BMCs like iDRAC and iLO both have transitioned to UEFI in the past few years. At least the first one I got my hands on that didn't mark EFI support as experimental (and worked properly) was in 2016. Supermicro IPMI has supported UEFI boot on most servers since about 2018, so it's certainly in place in a number of places. The Redfish standard became supported in EDK2 in 2019 as well. Server adoption is definitely *much* slower than desktop adoption because servers are much more expensive to deal with and replace. Not to mention, Microsoft just didn't bother making it matter for Windows Server certification until last year (even though Windows is a small part of the market relative to Linux).
