We do in fact have numbers on this. For instance, since F25 came out,
218 people have filed 1,404 items of feedback on F25 updates in Bodhi.

I wonder how many have updates-testing enabled, and how many have just installed particular updates to test them...

I don't have updates-testing enabled, but I will test specific updates that relate to bugs I have filed by updating that package with "--enablerepo=updates-testing" and then file feedback,.
