There's an entry in /var/log/messages that corresponds to the time
when I've had to restart...

And no, I can't connect using squidclient when it stops responding.
Hitting a disk-full issue on the log drive?
That can cause the logs to be empty.

That disc is only at 25% usage.
how about netstat -vnl after squid has stopped responding, to see if
port 3128 is still open ?
