More to the point, gedit is part of the core GNOME distribution, and so
is GNOME-VFS (virtual file system) aware. I've never played around with
this properly, so I'm not sure how exactly the URL should be
constructed, but just try doing File -> Open in gedit and typing in
something like:

ftp://username:password@machine:port/path/to/file

or perhaps

ssh://username:password@machine:port/path/to/file

No doubt someone else on the list can tell you more precisely.
