More than likely squirrelmail is getting pulled in as a dependency from
another package.  Any idea where you got squirrelmail-1.2.8-1.7.x?  I don't
think that came from Red Hat.  In addition, the release number (1.7.x)
would seem to suggest that the package was for 7.x release, not 8.0.

Anyway, something you can try is to run 'up2date --configure' then pull up
the "Package Exceptions" tab.  There you will be able to list squirrelmail
as a package to skip.  Since I'm not able to replicate your setup here in
the lab, can't guarantee this will work (depends on just what's causing the
dependency) but give it a try.
