Another option might be to use something like wget or htdig to just rip through the whole site and generate a static site out of it... I did something like that once for an educational CD, except I just wrote the generator myself. I'm not sure wget existed back then, and I'm pretty sure htdig didn't... Had to put a bit of stuff into JavaScript for the "quiz" portion, but it worked fairly well.
