I think its a steak covered with some sort of 'local' sauce... sort of like swiss steak except not being tenderized... if it's an actual 'historical lumberjack meal' it probably was meant to hide rotting meat :)

We Americans take great pride in our past due leftovers that we still manage to eat or...sell to someone to eat....
