I didn't establish a connection during installation, but I did establish a connection manually on my installed system by enabling the device from the . I didn't check whether 'Options' was greyed out prior to activating my connection. Let me repeat the procedure... Confirmed, 'Options' seems to only be available when a NIC has been activated. I presume you could manually run 'nm-connection-editor' to setup some NIC details ahead of time.
