FreeOTFE allows you to mount dmcrypt/LUKS volumes under Windows and access them as though the encrypted volume was just another drive connected to your PC. Using FreeOTFE is pretty straightforward - just select "File | Linux | Mount file..." (or "File | Linux | Mount partition..." as appropriate), select the encrypted Linux volume to be mounted, and then enter the right password (and other details, if needed). A new drive will appear, allowing you to freely read and write to the encrypted volume. Between SuSE and Ubuntu, I'd suggest Ubuntu - though that's *purely* based on the impression I have that it's gained a good reputation as being a good "first distro" for people to get into Linux.
