To record from sox you can do
  sox -t ossdsp -r 44100 -c2 /dev/dsp some_output_file.wav
This make a stereo recording of what is connected to the sound card
sampled at 44100 kHz.  It
assumes you've got a mixer like umix, you've set levels and have
some audio source connected to the sound card's input.

Ecasound does not have things like Dolby Noise-reduction.  It does offer
noise gates but I've not played with them.
