I am not aware of a tool to produce DAISY books under Linux.  Most
of the stuff, LP Studio Pro, and APH's upcoming book wizard work
under Windows.  You might inquire with BookShare.org, I don't know
what they are using, but then they only have text-only books, not
text and voice.
