I hate to sound like a one-note samba, but have you checked out Xfce? not only is it much more lightweight than Gnome, if that's an issue, it's very configurable and my desktop looks pretty much the way it did under Gnome 2, with some extra features that I, personally, like. And, if you find it difficult to get the mouse on some small active patch to bring up your Activities (as my sister did with Ubuntu's Unity) you won't have to worry. In fact, I've got my computers set that a right-click on the desktop brings up the main menu wherever I happen to have the mouse; quite convenient, once you've gotten into the habit. If nothing else, it's worth using a Live system to try it out.
