Edit your /etc/inittab file (need root priveledges). There is a line id:5:initdefault: just change the 5 to 3 (other options are described in the file)and you have full multiuser access but no X. DO NOT CHANGE OTHER THINGS IN THE FILE UNLESS YOU KNOW WHAT YOU ARE DOING! You can then startx at anytime to enter X. The alternative is to leave X there and switch to another virtual console (ctrl-alt-F# where # is number between 1 and 7), then it looks just like a text interface. Why do you not want X (apart from it taking up memory and resources)? I find it much easier to do things in several different console windows in X. How do I change the boot procedure so that it does not load at startup.
