If you run the game from the console, what kind of wine output do you get when the game exits after it changes your screen resolution? Another thing to test would be to go to the graphics tab in winecfg and check the "Emulate a Virtual Desktop" and set it to 800x600 resolution and see if the game fires up. It may be that the game is attempting to start in a video mode determined by xorg.conf settings but is unable to find anything reasonable. If at all possible see if there is an ini file in the FIFA program directory that allows you to start it in windowed mode, or maybe theres a switch you can start the main executable with that allows it to start in windowed mode instead of full screen.
