There is. Write a modeline "640x480@120" or something like this, and
include it in the Screen section. man Xorg.conf for details.

Maybe one can define the wanted video mode when using OpenGL, but I'm no
OpenGL programmer. From what you write, I think that Xorg.conf is only
partially important for what is happening.
