How about creating a stub script:

dan@parakeet ~ $ cat bin/ssh-nh
#!/bin/sh
ssh -o StrictHostKeyChecking=no -o UserKnownHostsFile=/dev/null -o
LogLevel=ERROR "$@"
dan@parakeet ~ $

Or an alias:

dan@parakeet ~ $ alias | grep ssh
alias ssh-nh='ssh -o StrictHostKeyChecking=no -o UserKnownHostsFile=/dev/null -o
LogLevel=ERROR "$@"'
