Michael is correct - it comes from ServerName in your Apache configuration. If nothing is found there, it falls back to the $domain setting in SquirrelMail. Sounds like you may not have your machine's hostname set up correctly. That'd be where I would start. If you do, then you need to figure out why Apache isn't picking it up.
