Please provide information about used PHP version and third party
SquirrelMail plugins. Show all modification that you made in newmail plugin
and other standard SquirrelMail scripts.

Issue that you have is not related to IMAP server selection. Standard
newmail plugin can't react the way you are saying. newmail plugin does not
check IMAP server when option block is added to src/options.php.
