Look into the imapsync program.  It will allow you to move or copy
messages from one account to another.  The accounts can be on the same
IMAP server or on two different servers.  It runs on any Unix-like
system.  I've used it very successfully to transfer accounts between
servers (from UW-IMAP to Cyrus, from Courier to Cyrus, and from Cyrus
to Cyrus).

Using imapsync, the process to "rename" an account would be:
  - create a new account with the new name
  - use imapsync to copy/move all messages from the old account to the
new account
  - copy the SquirrelMail .abook, .sig, and .pref files over to the
new account name in the SM data directory
