Change username of mail account, or move mail to new account

Our webserver runs as nobody.

Greetings all. I realize this isn't strictly an SM question, but I figured
that the smart people here may be the best source of an answer.

I want to change the username of a mail account that is accessed with SM.
e.g. I want to change it from Moe@xxxxxxxxxxx to Curly@xxxxxxxxxxxx
(Domain stays the same, but mail user name changes.)

What's the best way to do this, so logging in with the new mail user name
Curly@xxxxxxxxxxx will show all the mail and folders that were in Moe's
account and all prefs are changed to the new name?

Or, if that's too complicated, I could create the new user account
Curly@xxxxxxxxxxx separately, and manually recreate the various SM prefs.
In that case, how would I move or copy all the mail and folders from the
old account to the new account, from Moe@xxxxxxxxxxx to Curly@xxxxxxxxxxxx
