I really wish I could off sage advice but...  I've seen a couple of docs 
that talk about doing nfs over ssh, but it seemed to be fraught with too 
many dangers.  Iffen I was to do it, I'd probably use something like 
freeswan or CIPE to build a tunnel between the two hosts.  That way 
managing traffic on a port by port basis is not needed.
