Whose IMAP are you using? Courier IMAP (at least the version I'm running) is in init.d (not xinetd.d) and is setup to use chkconfig by level. Assuming you installed the imap that came on the CDs, you shouldn't have an "imap" file in /etc/init.d, anyhow. There should be one in /etc/xinetd.d.
