i believe the .src.rpm infact contains the kernel sources and would be installed into /usr/src/linux
form where the usual procedures involved in compiliing a custom kernel can be followed.

I haven't actually unpacked one before.. I use the ones from kernel.org

No!!! (sorry) You want the kernel-source RPM. This is a copy of the kernel sources so that you can build the driver against them. If you installed off the CDs then you can get the kernel-source RPM from one of those. Installing .src.rpm will put a bunch of files in /usr/src/redhat and they're of no use to you.
