Just for a proper end to this thread the answer is:

Add this to your sendmail.mc and recompile:
FEATURE(masquerade_envelope) FEATURE(genericstable, `hash -o 
/etc/mail/genericstable')
GENERICS_DOMAIN_FILE(`/etc/mail/local-host-names')

Create a file in /etc/mail called genericstable and the entries should 
look like:

user.name      user@xxxxxxxxxx

make a hash of the new file:

makemap -r hash genericstable.db < genericstable

I think I covered everything.
