This is mostly true. One big exception is Open Office, which has it's own print setup program, oopadmin, that should be run as root to define the printers. OO can still print to your system printers without this step in many cases, but I've had problems printing envelopes and other custom forms until I defined my printers using oopadmin.

I think the gimp also has it's own print interface and drivers, which may be important if you need very high quality color output. I just print to the system defined (CUPS) printers with the gimp, but I don't have a color printer.
