If you check the evolution support faq on ximian.com, it's the second or third question there. Here's the basic gist, for details see the ximian site: For your mail, there are basically two options. Both involve starting in Windows and using either Mozilla Mail or a tool called outport (http://www.cyberus.ca/~phoenix/outport/) to import the mail to the mbox format. Then in Linux you can import that file into Evolution (File->Import...). For your contacts, export them from Outlook to a csv file, then use the csv2vcard.pl script that comes with evolution to convert it to vcard format, then run File->Import...->Import from Single File.
