We are running a RedHat ES web server. What is the best open source firewall software out there?

Go to the fwbuilder website.
Read the howto's and install that.
It has a GUI that operates very much like Checkpoint's management console. (completely different GUI, and maybe some people may say a little ugly, but it is the same "mindset" as Checkpoint).
