Postfix has been mentioned as well. I have not discussed Exim simply because I have no knowledge of it. In the same vein, Courier (www.courier-mta.org) is another option, that offers single-point configuration for SMTP, POP, IMAP, and even webmail. Seems great, but I also have no experience with it.
