For the adventurous: try raidreconf (http://unthought.net/raidreconf)

It has the "import disk" option for creating an array out of an existing
single disk plus some new disk(s) and a raidtab.

I suppose you could import the existing RAID-1 into a RAID-0 consisting
of your old RAID-1 and a newly created RAID-1 (which you create on your
two new disks prior to using raidreconf).

However - beware !!!  This is definitely some functionality of raidreconf
that hasn't seen much testing - in fact I haven't tried it myself after
I got the code back from the maintainer (long story).

Anyway, take good backups whatever you do.

If you decide to try out raidreconf, please let me know if it worked. I've
had quite some success with it lately, but it needs a lot more testing
that I can possibly give it.
