Well, you can get appearances similar to the rather unearthly black skies
and white foliage typical of infrared B&W photos through Photoshop actions
(I've seen examples, but haven't done it myself).  It's as legitimate as
any other drastic tonal remapping technique.  The results won't be *the
same as* a real near-infrared B&W photo, but depending on why you're doing
it, you might very well not care.
