What's more, you're constrained by what the final output will
handle. It doesn't really matter how much dynamic range is available
in the capture if the paper and ink, or photographic print, won't
handle it.

8 bits can hold 256 levels of tone - and those tones can be
whatever you
want them to be. They don't have to be a simple gamma curve.
