I have read quite a few books on Photoshop but the best one I've read to
date is "Adobe Photoshop CS2 for Photographers" by Martin Evening.

Great layout, colorful and filled with good illustrations, well organized
and very detailed.

I would also highly recommend "Real World Camera Raw with Adobe Photoshop
CS2" by Bruce Fraser. Great and detailed information on all aspects of Raw
conversion with ACR as well as great insights on how to address the digital
workflow from a simple and productive point of view.
