It's how Nokia will push system and 1st-party software upgrades in the future, so uninstalling osso-software-version means you wont get those upgrades.[1] apt-get update just refreshes your repository list, what you want to ask about is apt-get upgrade. The difference is that osso- software-version is how the upgrades will be made available through Application manager. You _may_ be able to upgrade using apt-get upgrade, but it wont appear in Application manager. Either way, the better solution is to either install and uninstall Gizmo/Skype/Rhapsody, and that will take care of it, or to remove the .desktop files for Gizmo/Skype/Rhapsody from /usr/share/ applications/hildon. There are a couple enhancement requests on Bugzilla to allow these bundled applications to be uninstalled easily.
