Careful.  You want >, not >> here.  Also don't forget to modify
/etc/hosts, or you'll have problems.

(In my opinion setting a custom hostname on the tablet is a bit
pointless; however getting your LAN's internal DNS server to give it a
meaningful name is pointful.)
