Heinz,
I now have two available PVs, if I craete a new VG / LV will I be able to pvmigrate (?) the data off these two drives or do I need to do some form of pv import?

Unless you have actual backups of /etc/lvmconf somewhere, I'm afraid so.

If you really don't have actual LVM metadata backups:
in order to get to the other 2 PVs out of 3 in your VG, you want to use
LVM2
and device-mapper and run "vgscan --partial".
