And I added detection of this chip (and other IT878xF chips) to
sensors-detect. I had the patch pending for weeks, it was about time
that I committed it.

Note that the IT8726F is an old chip, despite the high number. It's a
modified IT8716F chip with just one extra feature (AMD power
sequencing.) The IT8720F is the latest 5V chip with 4V ADC (16 mV/bit.)
Starting with the IT8721F, chips are powered with 3.3V and have a 3V
ADC (12 mV/bit.)

Unfortunately the IT8783F can be powered with either 3.3V or 5V
according to the scarce documentation I have, so it's difficult to tell
whether it is more like the IT8720F or more like the IT8721F. Or maybe
it's like neither and will need dedicated code, it's impossible to say
without a datasheet.
