I could have done that except I found out post-install alt-f2
gnome-terminal using gnome classic puts me in an enter command box with
a close button and once that close button is hit the command does not
execute.

Well, I don't know. You're using some kind of graphical widget, and I
don't bother with those. I simply open a console/terminal and enter the
passwd command. I get no molly coddling from the passwd command.
PS: Of course, you need to be root, to modify root's passwd.
