Well if it is to be similar to windows I have found the K desktop environment quite good. Infact over here I run KDE with staroffice for office applications, I use the mailer that comes with KDE for mail. It is very nice and reads HTML mail too and easily configured as well. This I run with SuSE linux 7.0 which is excellent as far as X is concerned with a nice interface ( SAX) for setting up X that detects all your hardware and does everything for you. I have used redhat too though for workstation use i would recommend SuSE because of its very friendly interfaces like yast, sax2, yast2 etc and besides it comes with staroffice and the setup is simply one of those wizards like the windows ones in KDE.
