I have a larger Behrenger Eurorack mixer (the 2004) and it has main
output L/R and alt output L/R on the back. My guess is that you're looking
at a mixer that only has one pair of outputs, so whatever the number
of inputs to the mixer, you'll only ever have the pair of outputs going
into the soundcard - but for an initial foray into recording, that's
going to be just fine.
I know you had an idea of getting multiple soundcards and recording
multiple tracks at once... while that seems like a good idea, the reality
is that you have to have more expensive cards that sync up with each
other to have that work.
At this point, and given your low budget, I'd suggest that you look at
putting the money into the mixer and the mics. If you get a mixer with
4 outputs (look for the keywords "4 buses") then when you get a better
sound card like the Delta44 that will handle 4 inputs at once, you'll be
ready for it. A decent mixer will also give you the phantom power that
you'll want when you start buying some nicer mics that need it.
