I suggest starting by having a separate SSID for IPv6 only and encouraging people to test it out. Advertise it in the notes, on the mailing list, and elsewhere. Ask people in the post-meeting survey whether they have tried it, and whether it worked with their computer. After there is a high success rate, then start migrating the main wireless network to IPv6 only, but leave a legacy SSID for IPv4.
