Can anyone advise if removing sharefonts > will break fu or any other parts of gimp? As you could have easily found out yourself, there is no more script using fonts from the sharefonts package. There are some scripts using fonts from the freefonts package, but even that doesn't make it a dependency. fontconfig will happily substitute some other font if the requested font is missing.
