Yes, of course. Chinese fonts are not suitable for displaying Japanese
text (and vice-versa, of course). They'll get used if you have nothing
else, but if you've got both kinds of fonts, you'll get the right ones.
This also works for Korean and traditional vs simplified Chinese.
