If NM isn't managing a connection to the Internet then Firefox (fixable), Evolution, Empathy and almost certainly other apps go into offline mode. You can still run a server without NetworkManager but a desktop install now requires that it be installed and managing your connection. Been there, tried that and have the t-shirt.
