IO is gone, but there's still an "Encrypt my partitions" checkbox on the "disk selection" screen (first screen of the spoke, before you get to the custom part interface) - it's been moved there from IO. So there is a path to cover here: select 'encrypt my partitions' on the disk selection screen, then use 'create them automatically' on custom partitioning, and check the result is encrypted.
