Anything that writes will do "terrible" things (really just corrupting
one of the copies, which for two-drive RAID1 makes for "fun").  Since
according to the UEFI spec, the capsule gets deleted after processing,
that would count as a write.

I usually put that kind of thing on an external boot medium or just keep
another random non-RAIDed FAT volume around for such a thing.
